Luciana Soares, DCN, RDN, LDN, FAND, comes to Johnson & Wales University from a major Florida university, where she served as a Nutrition and Dietetics Faculty and Chair and then as Dean of Academic Affairs for several years.

Soares was born in Brazil, where she owned several high-end restaurants, acting as chef and manager, responsible for operations, marketing, and quality control. She was also a food service and editorial consultant, designing, planning, and implementing new establishments and adapting and translating international and thematic cookbooks for a major Brazilian publishing company. She then moved to Florida, where she graduated from Johnson & Wales University as a proud chef. Her passion for food and health led Soares to become a Registered Dietitian Nutritionist and work in the clinical, community, and academic settings, where she remains.

Soares is an active Academy of Nutrition and Dietetics member and is part of several committees and groups, having earned the Fellow of the Academy of Nutrition and Dietetics distinction.
